Manhattan Coffee Roasters has released another stellar coffee from Cafe Granja La Esperanza. The Mokka variety is a mutation of Typica that we commonly see in Brazil and Hawaii and find its origin in Yemen and is known for being one of the oldest varieties around. A short tree with small cherries leaves us with the smallest beans we’ve ever had to roast.

Of coarse the work of Cafe Granja is well known and this coffee without a doubt exhibits that typical CGLE attnention to detail and high quality.
The whole cherries are fermented for 48 hours in open air special barrels with the temperature sitting around 25 to 28 degrees celcius. It is then left in a silo for 48 hours where the temperature sits at 35 degrees celsius before it’s sun dried for 15 days.
